Sencha – The Most Popular Green Tea

The Japanese word “sencha” literally means “brewing tea.” Because sencha is the most popular tea in Japan, the word is used as a synonym for “green tea.”
Compared to green teas from China and other countries outside Japan, Japanese green tea is distinguished by its pre-process method. Fresh tea leaves are briefly steamed right after they’re picked to deactivate the enzymes that would otherwise encourage oxidization. This unique process accounts for the fact that Japanese green tea preserves almost every good-for-your-health property in the fresh leaves.

Lightly-Steamed (Regular) and Deep-Steamed

Two types of sencha are available. They’re differentiated by the length of steaming time: there are lightly-steamed (regular) senchas and deep-steamed senchas. Generally speaking, teas from the select growing zones and higher-grade teas (such as the first-harvest teas discussed below) are processed with shorter steaming times to retain their natural flavor. Deep-steaming is a relatively new processing method. Advantages brought by longer steaming are a milder yet rich-bodied taste with less bitterness, brilliant green brewed color, and easier brewing.

Fusing New and Old Traditions

There is no standardized grading system for green tea quality. Aside from the growing district of origin, a widely accepted grading criterion is the season of harvest. Green tea from leaves harvested in late April through early May is called “ichiban-cha,” the first pick of the year. The first pick is considered the best for its aroma and high concentration of amino acids. In Japan, teas are harvested three or four times a year, with the exception of gyokuro. The second pick is performed about 45 days after the first pick and the third pick about two to three weeks after the second pick.

Gyokuro – The Finest Japanese Green Tea
